Pancake Day Er’day

It’s pancake day tomorrow so I’m going to share this super quick and easy recipe for my favourite pancakes!

• 225g Plain Gluten Free flour (you can use ordinary flour as well just reduce the amount of milk you’re adding)

• 2 tsp baking powder

• 1/2 tsp bicarbonate of soda

• 1 tsp cinnamon

• 25g brown sugar

• 1-2 handfuls of raisins

• 350ml Oat milk (300ml if using normal flour)

• 1 tsp vanilla essence

Throw all the dry in ingredients in a bowl then slowly add in the milk stirring along the way until it’s a smooth batter.

Lightly oil pan on a medium heat, once warm pour a ladleful of batter into pan.

Once bubbles begin to appear flip over your pancake and cook till golden brown all over.

One thing I always do when cooking pancakes in pop 2 plates in the oven on a low heat just while I’m cooking the first batch, then grab the plates out the oven and stack the pancakes on plate 1 as I go along covering with kitchen roll and plate 2 to keep them all nice and hot.
